  • Step 1
    Wash then peel your carrots, then chop them into small pieces.
  • Step 2
    Put a pat of butter and a drizzle of olive oil in a pot, and cook your carrot pieces on high heat for 2 minutes, stirring regularly so that they cook slowly.
  • Step 3
    Add enough water to your pot to cover the carrots, and then add the grated ginger. Then, salt and pepper the soup and put the lid on the pot, and let it cook on low heat for 15-20 minutes.
  • Step 4
    Make sure your carrots stay immersed in the water the whole time it’s cooking. If they start to emerge, add some more water until they are covered again.
  • Step 5
    Once the carrots are tender (they should be easy to mash), season and blend. Add a bit of water if the consistency is too thick. Serve and enjoy!
