- Step 1
Preheat the oven to 400°F. Drain then rinse the chickpeas in clean water. - Step 2
On a baking tray or in a baking dish, add the drained chickpeas. Season them with a drizzle of olive oil, salt and pepper. Mix well, then bake for 15 minutes at 400°F. - Step 3
At the same time, wash then cut the zucchini into half-moons. - Step 4
Heat a drizzle of olive oil in a frying pan over medium heat. Add the zucchini. Add salt and pepper then brown them for 7 to 8 minutes. - Step 5
Meanwhile, wash then cut the cherry tomatoes in half. - Step 6
Wash then cut the cucumber into small cubes. - Step 7
Prepare the mixed grains according to package directions. - Step 8
Prepare the satay sauce. In a bowl, mix: peanut butter, sweet soy sauce, grated garlic and grated ginger. If necessary, add a splash of water to dilute the sauce. - Step 9
Once golden brown and crispy, remove the chickpeas from the oven. - Step 10
In a bowl or deep plate, serve the cereal mixture with the cherry tomatoes, cucumber, grilled zucchini and crispy chickpeas. Add the satay sauce and re-season to taste. It's ready!
