Broccoli Soup with Parmesan Crisps

Broccoli (fresh)

Heavy cream

Preheat oven to 200°C/390°F. Cut the broccoli into florets and dice the stem. - Step 2
Place the broccoli in a pot and cover with water. Add salt, cover and cook over medium heat for 15 minutes. - Step 3
Meanwhile, make small piles of grated parmesan on a parchment-lined baking sheet. Sprinkle with pepper and bake for about 5 minutes at 200°C/390°F. Check frequently and remove from oven when golden brown. - Step 4
After 15 minutes, purée the soup using an immersion blender or blender. Add the cream and mix. Add a bit of water if the soup is too thick. - Step 5
Serve the soup, topped with the parmesan crisps!
