Broccoli & Hazelnut Salad

250 g
Broccoli (fresh)

1 handful
Spring mix lettuce

2 tbsp
Goat's cheese

10 g
Hazelnuts

1 tsp
Apple cider vinegar

1/2 tsp
Dijon mustard

- Step 1
Wash & cut the broccoli into florets. Slice them in halves or quarters, depending on their size. - Step 2
In a pot of salted boiling water, cook the broccoli for 5-7 min or until tender. Drain. - Step 3
Meanwhile, roughly chop the hazelnuts. - Step 4
Prepare the dressing. In a bowl, combine : apple cider vinegar, mustard & 1 tablespoon of olive oil per person. Season with salt & pepper. - Step 5
In a salad bowl, serve the broccoli, salad leaves, crumbled goat's cheese & toasted hazelnuts. Pour the dressing over top & toss to combine. Enjoy !
