Broccoli & Feta Patties

Broccoli (fresh)
50 g
Feta cheese (block)
1 tbsp
Bread crumbs (plain)
1/2
Egg
2 tbsp
Flour (all-purpose)
1 handful
Spring mix lettuce

- Step 1
Cut the broccoli into florets* and cook them in a large pot of salted boiling water for 5 minutes. Drain and add to the bowl of a food processor. *Check out our tips for this step - Step 2
Pulse a few times. - Step 3
Transfer the broccoli to a large bowl. Add the eggs, flour and crumbled feta. Season with salt & pepper and mix together. - Step 4
Pour the breadcrumbs into a shallow dish. Form round patties of the broccoli mixture using your hands and dip it in the breadcrumbs to coat. - Step 5
Gently press down to flatten the veggie patties. - Step 6
Heat a few drizzles of olive oil in a pan on medium heat. Cook the patties for 3-4 minutes on each side. - Step 7
Serve with a side salad and enjoy!
