  • Step 1
    Wash & cut the broccoli into florets.* Cook them in a large pot of salted boiling water for 5 minutes. Drain thoroughly once cooked through, to remove any excess water. *Check out our tips for this step
  • Step 2
    In the bowl of a food processor or a mixer, add the drained broccoli. Pulse a few times to mix the broccoli while maintaining small bits.
  • Step 3
    Preheat the oven to 190°C. In a large bowl, combine : the drained broccoli, eggs, flour & crumbled feta. Season with salt & pepper and mix together, until you obtain a slightly sticky mixture. If the mixture is too liquid, add flour or breadcrumbs & mix.
  • Step 4
    In a shallow dish, pour the breadcrumbs. Form round patties of the broccoli mixture & coat with the breadcrumbs.
  • Step 5
    Arrange the veggie patties on a baking tray lined with parchment paper & lightly flatten them. Drizzle lightly with olive oil & bake for 15-20 min at 190°C, flipping halfway through.
  • Step 6
    Once golden brown, remove the patties from the oven & serve with a side of salad. Enjoy !
