Broccoli & Cheddar Soup

Vegetable bouillon (cube)

Finely slice the onion. - Step 2
Wash and peel the carrots, and cut them into 1-inch pieces. - Step 3
Add a drizzle of olive oil to a large pot on medium heat. Add the onions and carrots and cook for 5 minutes, stirring frequently. - Step 4
Add 1 cup of vegetable broth or stock per person, the milk (can be replaced with non-dairy option). Season with salt & pepper, cover and cook for 5 minutes. - Step 5
While the soup is cooking, cut the broccoli into florets.* *Check out our tips for this step - Step 6
Add them to the pot and cover for an additional 10 minutes on low heat. - Step 7
Add 2/3 of the grated cheddar and reserve the rest. - Step 8
Serve in bowls and top with remaining cheddar. Enjoy!
