Potato

Tomatoes (canned, peeled)

Peas (fresh)

Red onion

Garam masala

1/2 tsp
Cumin (ground)

1/4 clove

- Step 1
Peel & large dice the potatoes. - Step 2
Peel & small dice the onions. - Step 3
Peel & mince the garlic. - Step 4
In a hot dry pan, over low heat, add the garam masala & ground cumin. Sauté for 30 sec, stirring. - Step 5
Add a drizzle of olive oil, the onions & garlic. Sauté for 2-3 min, stirring. - Step 6
Add 100ml of water per serving, the canned tomatoes & potatoes. Season with salt & pepper. Stir, cover & leave to simmer for 15 min, over low heat. - Step 7
After 15 minutes, add in the green peas. If needed, add extra water to the pot. Cover & leave to simmer for another 10 min. - Step 8
Serve the Bombay potatoes in a bowl & top with fresh cilantro. Re-season to taste & enjoy !
