- Step 1
Mix the flour, baking powder and a pinch of salt in a bowl. - Step 2
Separate the yolk from the whites. - Step 3
Scramble the yolks in another bowl and incorporate the milk. - Step 4
Add a pinch of salt to the whites then bring them to a peak with an electric mixer. - Step 5
Add the milk/egg yolk mixture to the dry ingredients and mix until fully combined. - Step 6
Add the melted butter and mix again. - Step 7
Slowly incorporate the egg whites using a spatula, being careful not to break them. - Step 8
Roughly mix half the amount of jam into the pancake batter. - Step 9
Heat a frying pan to medium and lightly butter. Add a small ladle of batter. - Step 10
Cook for 2-3 minutes on each side over low heat. - Step 11
Turn them over once bubbles form on the surface. - Step 12
Continue until all the batter is used. - Step 13
Once the pancakes are cooked, serve them with a dab of butter and the rest of the jam. Enjoy!
