  • Step 1
    Preheat the oven to 200°C. Thickly slice the beets.
  • Step 2
    Heat the sugar and balsamic vinegar in a pan, bring to the boil.
  • Step 3
    Add the beets, cooking for 5 minutes on each side on a medium heat (optional: add a bit of butter towards the end of the cooking time).
  • Step 4
    Gently place the beets into a pastry mould/dish. Cover with the shortcrust pastry & fold in the edges of the pastry. Prick the pastry with a fork. Bake for 25 minutes at 200°C.
  • Step 5
    At the end of the cooking time, the pastry should be golden. Wait for 2 minutes before removing from the pastry dish, turning it over onto a plate.
  • Step 6
    Sprinkle the goat cheese on top (optional: a bit of thyme if you have any).
