  • Step 1
    Cook the quinoa according to the instructions on the package. Once cooked, rinse with cold water to stop the cooking.
  • Step 2
    Make the dressing by mixing 1 teaspoon of vinegar with 1 tablespoon of olive oil per person. Season with salt & pepper.
  • Step 3
    In a large bowl, mix together the quinoa, lettuce, beets (chopped into cubes), crumbled goat cheese, crushed walnuts and the dressing. Enjoy!
