  • Step 1
    Cut the cooked beets into cubes.
  • Step 2
    Crumble the blue cheese into small pieces.
  • Step 3
    In a shallow bowl, add the lamb's lettuce, beets, blue cheese and walnuts.
  • Step 4
    Make a vinaigrette: Mix the mustard with 1/2 TB vinegar (any kind) and 1 TB olive oil per portion.
  • Step 5
    Dress the salad with the vinaigrette, season to taste and serve!
