Balsamic Sweet Potato & Pecan Salad

200 g
Sweet potato
40 g
Feta cheese (block)
1 handful
Spring mix lettuce
20 g
Pecans
1/2 tsp
Whole grain mustard
1/2 tbsp
Balsamic vinegar

- Step 1
Preheat oven to 200°C. Peel & cut the sweet potato into large cubes. - Step 2
Place the sweet potato cubes on a baking sheet. Drizzle with olive oil. Season with salt & pepper. Mix it all together. - Step 3
Bake for 25 min at 200°C. Remove from the oven. - Step 4
Coarsely chop the pecans. - Step 5
Add the balsamic vinegar, whole grain mustard & 1 tbsp of olive oil (per person) to a small bowl. Season with salt & pepper. Whisk the dressing. - Step 6
Arrange the salad greens on a plate. Top with the roasted sweet potatoes, crumbled feta & chopped pecans. Drizzle the dressing over top. Dig in!
