Crème fraîche
2 slices
Bacon

Parmesan (grated)
1/2 handful
Spinach (fresh)

- Step 1
Preheat the oven to 200°C. In a bowl, mix : the crème fraîche & grated parmesan. Season with salt & pepper. - Step 2
Butter an oven-proof dish or individual ramekins. Add the cream/ parmesan mixture & spread it out evenly. - Step 3
Add the baby spinach leaves into the dish & stir to combine. - Step 4
Add the bacon strips, then make shallow holes int the mixture, using the back of a spoon. - Step 5
Delicately crack the eggs into the holes. Season with salt, pepper & a pinch of piment d'Espelette, is you have some. - Step 6
Bake for 10-12 min at 200°C. Serve with a side of green salad or some toasted bread. Enjoy !
