Preheat the oven to 200°C. Mix the grated parmesan and crème fraîche in a bowl and season with salt and pepper. - Step 2
Butter an oven-safe dish or individual ramekins with butter and add the cream-and-parmesan mixture. - Step 3
Add the baby spinach leaves and mix. - Step 4
Add the bacon. - Step 5
Make shallow holes using the back of a wooden spoon and break the eggs into the holes. Season with salt & pepper. Optional: Add a pinch of cayenne pepper or red pepper flakes for heat. - Step 6
Bake for 15 minutes. Serve with a salad or toast. Happy brunching!
