  • Step 1
    Preheat the oven to 200°C. Thinly slice the mushrooms.
  • Step 2
    In a bowl, mix the crème fraîche, parmesan and spinach. Season with salt and pepper and mix.
  • Step 3
    Grease a baking dish and spread the crème fraîche-spinach mixture in it.
  • Step 4
    Gently break the eggs into the baking dish, keeping space between them. Add the mushrooms and crumbled cheese. Season with salt and pepper.
  • Step 5
    Bake for 15 minutes at 200°C.
  • Step 6
    After removing the dish from the oven, you can add more goat cheese and a few fresh spinach leaves (optional). Serve with a green salad or toast. Brunch is ready!
