- Step 1
Preheat the oven to 180°C/350°F. Peel the asparagus and cook in a pot of boiling water for 7 minutes. - Step 2
Mix the parmesan and crème fraîche in a bowl and season to taste with salt and pepper. Cut the asparagus crosswise into rounds, reserving the tips. - Step 3
Grease small ramekins or oven-safe bowls; add asparagus and 1 tablespoon of the parmesan cream to each ramekins. Top with the asparagus tips and break the egg on top. (Optional: Add a pinch of chile.) - Step 4
Bake for 7 to 8 minutes. - Step 5
Tip: If you don't have individual ramekins, you can cook all of the eggs together in a large baking dish for about 15 to 20 minutes.
