- Step 1
Preheat the oven to 180°C. Unroll the pie crust and press it into a pie plate. Pierce it a few times using a fork. - Step 2
Once the oven has preheated, cook the crust for 5 minutes. - Step 3
While the crust is in the oven, cook the bacon in a frying pan on high heat until golden. - Step 4
In a bowl, whisk together the eggs, milk, heavy cream, salt and pepper. - Step 5
After 5 minutes, remove the pie crust from the oven. Sprinkle the crumbled bacon and cherry tomatoes (cut in half) into the pie crust. - Step 6
Shred the mozzarella and spread evenly. Pour the egg mixture over the top. - Step 7
Optional: Add a few branches of thyme or oregano - Step 8
Add salt & pepper and bake at 180°C for 45 minutes, or until the crust is golden brown. - Step 9
Let it rest for 10 minutes before eating. Serve with a green salad and it's ready to eat!
