- Step 1
Preheat the oven to 180°C. In a hot pan, add the bacon bits. Cook them for 3-4 min, over high heat. - Step 2
Meanwhile, prepare the loaf batter. In a mixing bowl, combine : the yogurt & eggs. Season with salt & pepper. - Step 3
Add the olive oil & stir to combine. - Step 4
Add the flour & baking powder. Whisk until the batter is smooth & homogenous. - Step 5
Add the caramelized onions, shredded cheese & bacon bits. - Step 6
Pour the mixture into a greased or lined loaf tin (we used a 29 x 10 cm dish here) & bake for 40 min at 180°C. - Step 7
Once the loaf is golden, plant the tip of a knife into the center of the loaf. If it comes out clean, the loaf is ready, otherwise, bake it for another 2-3 min. Serve it for ‘apéro’ or as a main with a side of green salad. Enjoy !
