    Preheat the oven to 180°C. Wash the eggplant and cook them whole for 1 hour in an oven-safe dish. Use parchment paper to avoid stickiness

    Once the eggplant is cooked, let it cool.

    Next, cut them in half, removing the flesh using a spoon.
  • Step 4
    Add the chopped garlic, olive oil, lemon juice, salt and pepper. Using a fork, mix together to incorporate all ingredients. It’s ready to eat!
