Autumn Mushroom Farfalle

Pasta (farfalle or bow-tie)

White mushrooms (whole)
1 handful
Spinach (fresh)
30 g
Goat cheese
1/2
Shallot
1/4 clove
Garlic
1 pinch
Herbes de Provence

Stovetop, Pot (small), Colander, Frying pan

- Step 1
Wash & slice the mushrooms. - Step 2
Peel & finely mince the shallots. - Step 3
Melt a dab of butter in a pan, over medium heat. Add the shallots & grated garlic. Sauté for 30 sec, stirring. - Step 4
Add the mushrooms & 'herbes de Provence'. Season with salt & pepper & continue cooking for another 10 min, stirring occasionally. - Step 5
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta. - Step 6
Add the spinach & drained pasta to the pan. Stir & continue cooking for another 2-3 min. - Step 7
Serve Autumn mushroom farfalle in a plate topped with the crumbled fresh goat's cheese. Re-season to taste & enjoy !
