Asian-Style Baked Salmon & Mushrooms with Rice

If needed, defrost your salmon. Preheat the oven to 200°C. Clean and trim the mushrooms and cut them in half. - Step 2
Spread the mushrooms on an oven-safe baking dish or sheet pan. Add a little oil, the garlic (minced or crushed), ground black pepper to taste, and half of the soy sauce. Mix and put into the oven to bake for 8 minutes. - Step 3
Meanwhile, cook the rice according to the directions on the package (about 10–11 minutes). - Step 4
After 8 minutes, remove the mushrooms from the oven. Add the salmon fillets, season with ground black pepper and the rest of the soy sauce, and drizzle with a bit of oil. Put the mushrooms and salmon in the oven for 12 minutes. - Step 5

Remove the salmon and mushrooms from the oven and serve with the rice.
