  • Step 1
    Cook the pasta according to the instructions on the box. After draining, rinse the pasta under cold water and set aside.
  • Step 2
    Cut the artichokes into quarters and pit the olives.
  • Step 3
    In a large bowl, mix together the pasta, artichokes, arugula and olives. Add a drizzle of olive oil, salt & pepper, and stir to combine. Optional:Add some lemon zest for extra flavor. Serve and enjoy!
