Apricot-Glazed Pork Tenderloin, Rice & Green Beans

White rice (long grain)
150 g
Green beans (frozen)
1 tbsp
Apricot jam
1 tsp
Balsamic vinegar
1/2 tsp
Sugar (granulated)

- Step 1
Heat a drizzle of olive oil in a pan over medium heat. Pat the pork dry and add it to the pan. Season with salt & pepper and sear for 15-20 minutes, turning occasionally, until browned on all sides and cooked through. Leave to rest before slicing into medallions. - Step 2
Meanwhile, cook the rice according to package instructions. Once cooked through, drain the rice & set aside. - Step 3
In another pot of salted, boiling water, cook the green beans for 3 min. Drain & set aside. - Step 4
Add the apricot jam & balsamic vinegar to a small pot and leave to simmer 1 minute while stirring. Stir in the sugar and leave to simmer 3-4 minutes until thickened. - Step 5
Slice the pork into medallions. - Step 6
Serve the sliced pork tenderloin with a side of rice & green beans. Drizzle the meat with the apricot glaze and season to taste. Enjoy !
