Turkey breast (cutlet)

Bread crumbs (plain)

Carrots (fresh)

1 handful
Arugula

1 tbsp
Greek Yogurt (plain)

- Step 1
Peel & cut the carrots in half lengthwise. - Step 2
Add the carrots to the air fryer basket with the rack. Season with salt & pepper & add a drizzle of olive oil. Air fry for 20 min at 200°C, flipping them halfway through. - Step 3
Meanwhile, prepare the turkey bites. In a blender, add the turkey & mix roughly. - Step 4
In a bowl, combine the ground turkey, eggs, breadcrumbs, garam masala & the juice & zest of the lemon. Season with salt & pepper. - Step 5
Form small turkey bites with your hand. Set aside on a plate. - Step 6
Place the turkey bites in the air fryer with the rack & a piece of parchment paper. Air fry for 8-10 min at 200°C, flipping halfway through. - Step 7
Meanwhile, prepare the yogurt sauce. In a bowl, mix the yogurt with the lemon zest & juice. Season with salt & pepper. - Step 8
Once the carrots & turkey bites are cooked through & golden brown, remove them from the air fryer. - Step 9
Spread the yogurt sauce on a plate, then add the roasted carrots, turkey bites, & arugula on top. Re-season to taste. Enjoy!
