  • Step 1
    Peel & cut the sweet potato into small cubes.
  • Step 2
    Add the sweet potatoes to the air fryer basket with the rack. Season with salt, pepper & a drizzle of olive oil. Air fry for 20 min at 200°C, mixing halfway through.
  • Step 3
    Meanwhile, roughly chop the pecans.
  • Step 4
    Prepare the dressing. In a bowl, mix : the balsamic vinegar, whole grain mustard & 1 tbsp of olive oil per person. Season with salt & pepper.
  • Step 5
    Once the sweet potatoes are tender & golden brown, take them out of the air fryer.
  • Step 6
    Serve the salad on a plate. Top with the roasted sweet potatoes, crumbled feta & chopped pecans. Drizzle the dressing on top. Enjoy!
