200 g
Sweet potato

40 g
Feta cheese (block)

1 handful
Arugula

20 g
Pecans

1/2 tsp
Whole grain mustard

1/2 tbsp
Balsamic vinegar

- Step 1
Peel & cut the sweet potato into small cubes. - Step 2
Add the sweet potatoes to the air fryer basket with the rack. Season with salt, pepper & a drizzle of olive oil. Air fry for 20 min at 200°C, mixing halfway through. - Step 3
Meanwhile, roughly chop the pecans. - Step 4
Prepare the dressing. In a bowl, mix : the balsamic vinegar, whole grain mustard & 1 tbsp of olive oil per person. Season with salt & pepper. - Step 5
Once the sweet potatoes are tender & golden brown, take them out of the air fryer. - Step 6
Serve the salad on a plate. Top with the roasted sweet potatoes, crumbled feta & chopped pecans. Drizzle the dressing on top. Enjoy!
