Chicken thighs (bone-in, skin on)
250 g
Fingerling potatoes
100 g
Cherry tomatoes
30 g
Feta cheese (block)
20 g
Kalamata olives

Red onion

- Step 1
Preheat the air fryer to 220°C (oven at 220°C). Clean & slice the potatoes in halves or quarters, depending on their size. - Step 2
Peel & slice the onions into thin wedges. - Step 3
Arrange the chicken in the air fryer basket with the potatoes. Season with a drizzle of olive oil, salt & pepper. Toss everything together & air fry for 20-25 min at 220°C (25-30 min in the oven at 220°C). - Step 4
Add the tomatoes to the air fryer & cook for an additional 5 min in the air fryer at 220°C (7-10 min in the oven at 220°C), until the chicken & potatoes are fully cooked. - Step 5
Meanwhile, drain & roughly chop the olives. - Step 6
Remove everything from the air fryer. Serve the chicken with the potatoes & veggies. Top with the olives, crumbled feta, a squeeze of lemon & some fresh herbs, if you have some. Enjoy !
