Stovetop, Pot (small) and Air fryer.

Recipe

  • Step 1
    In a pot of salted boiling water, add the spaghetti & cook according to the package directions.
  • Step 2
    Meanwhile, peel & cut the aubergines into thin slices lengthwise. Season with salt & pepper.
  • Step 3
    In a deep dish, add the egg. Whisk with a fork & season with salt & pepper.
  • Step 4
    Place the flour on another plate. Coat the eggplant slices in the flour, then in the beaten egg.
  • Step 5
    Add the breadcrumbs to a third plate & season with grated parmesan*. Coat the eggplant slices with the breadcrumbs. For a thicker crust, coat them a second time in the beaten egg mixture, then in the breadcrumbs. *Check out our tips for this step
  • Step 6
    Add the breaded eggplant slices to the air fryer basket with the rack. Add a drizzle of olive oil & air fry for 10 min at 190°C, flipping the eggplant slices halfway through.
  • Step 7
    Heat the tomato sauce according to package instructions. Once cooked through, drain the pasta. Add the tomato sauce & mix well. Set aside.
  • Step 8
    Once golden brown & crispy, take the eggplant out of the air fryer.
  • Step 9
    Serve the breaded eggplant with the tomato sauce pasta & a little parmesan, if you have some left. Add a few basil leaves & a drizzle of olive oil. Enjoy!

For a truly flavoursome dish, we suggest seasoning the breading with garlic, 'herbes de Provence' or smoked paprika.
