Air Fryer Coconut Shrimp

Raw shrimp (frozen)

Coconut (shredded, unsweetened)

Egg

Flour (all-purpose)

Bread crumbs (plain)

- Step 1
Thaw the shrimp if necessary. Preheat the air fryer to 190°C (oven to 190°C). In a bowl, combine : the breadcrumbs & shredded coconut. - Step 2
In another small bowl, crack the eggs. Whisk them. - Step 3
In a third bowl, combine : the flour with a pinch of salt & pepper. - Step 4
Dredge the shrimp in flour, then coat it in the egg mix. Finally, coat the shrimp in the coconut / breadcrumb mix. Place the coated shrimp on a plate & repeat with the remaining shrimp. - Step 5
Arrange the coconut shrimp in the air fryer basket, in an even layer. Drizzle with olive oil & air fry for 10 min at 190°C (15 min in the oven at 190°C), flipping halfway through. - Step 6
Once the shrimp are crispy & golden on the outside, remove them from the air fryer. Serve the crispy coconut shrimp with the sweet chili sauce & enjoy !
