Air fryer.

Recipe

  • Step 1
    Peel & cut the sweet potatoes into cubes.
  • Step 2
    Add the sweet potatoes to the air fryer basket with the rack & parchment paper. Add a drizzle of olive oil and paprika & season with salt & pepper. Mix & cook in the air fryer for 20-25 min at 200°C.
  • Step 3
    In the meantime, prepare the yogurt sauce. In a bowl, add : the skyr, grated garlic, lemon zest, lemon juice, a drizzle of olive oil, salt & pepper. Mix to combine. Set aside.
  • Step 4
    After 25 min, remove the air fryer basket. Add the falafels & continue cooking for 6-8 min at 200°C.
  • Step 5
    Meanwhile, reheat the quinoa according to package instructions.
  • Step 6
    Once golden & cooked through, remove the sweet potatoes & falafels from the air fryer.
  • Step 7
    Serve the quinoa in a bowl with the roasted sweet potatoes, falafels & yogurt sauce. Top with crumbled feta & chopped parsley, if you have any. Re-season to taste & enjoy!
