Preheat the oven to 180°C. Wash the peppers, remove the center with the seeds and cut into thin strips, then small cubes. - Step 2
Wash the tomatoes and cut in half. - Step 3
Peel the shallots and chop. - Step 4
On a baking dish lined with parchment paper, add the gnocchi, peppers, cherry tomatoes, shallots and herbes de Provence. Add a drizzle of olive oil, salt and pepper. - Step 5
Bake for 30 minutes at 180°C. - Step 6
Remove from the oven, serve and enjoy!
